INGREDIENTS:
200g of cooked chickpeas
1 ripe avocado
1 clove garlic
1/2 squeezed lemon juice
45ml of extra virgin olive oil
2 tbsp cumin
1 tbsp toasted sesame seeds
Salt and pepper to taste
STEP BY STEP:
Blend the cooked chickpeas with the garlic clove and a tablespoon of olive oil in a food processor.
Once a consistency similar to that of a fine purée is obtained, season with the spices and a little bit of pepper.
Peel the avocado, remove the stone and cut it into pieces.
Add the avocado and the second tablespoon of oil to the chickpea puree and blend everything again.
Add the lemon juice and salt. Blend one last time and serve drizzled with the rest of the olive oil and sprinkled with a little toasted sesame seeds.
Melon soup: (4 servings)
INGREDIENTS:
1kg of ripe melon pulp, peeled and seedless
1 ripe avocado
100 grams of spinach
1/2 squeezed lemon juice
4 tbsp hemp seeds
STEP BY STEP:
Mash the melon pulp and avocado until you get a creamy mixture.
Add the spinach, lemon juice and 2 tablespoons of hemp seeds and blend again.
Place the cream in a bowl and sprinkle the remaining hemp seeds on top.
Healthy Salads:
Green pasta salad : (2 servings)
INGREDIENTS:
100g of millet or wholemeal paste
1 ripe avocado
1 zucchini
1 broccoli
1/2 cucumber
100 gr of lamb's lettuce
10 green grapes
A few sprigs of chives
2 tbsp pumpkin seeds
2 tbsp sesame seeds
Salt and pepper to taste
STEP BY STEP:
Boil the pasta and allow it to cool.
Boil the broccoli and allow it to cool.
Cut the avocado in half and pit it. Cut the grapes in half. Cut the cucumber into slices and the zucchini into noodles.
In a deep bowl, place the lamb's lettuce base, the zucchini, half an avocado, the sliced cucumber, the broccoli, the grapes and the pumpkin seeds. Add chives.
Sprinkle sesame seeds, salt and pepper to taste.
Brown rice with wok vegetables : (2 servings)
INGREDIENTS:
200g of brown rice
2 carrots
1 leek
2 young garlic
1 onion for cooking
50g of green olives
2 tbsp raisins
100g of green lettuce
2 tbsp sesame seeds
Salt and pepper to taste
STEP BY STEP:
Boil the rice and allow it to cool.
Sauté the young garlic, the onion, the leek, the carrots and the green olives in the wok.
Add the rice and sauté a little more in the wok.
Place the lettuce leaves and rice with the vegetables in a bowl. Add raisins.
Sprinkle sesame seeds, salt and pepper to taste.
healthy sweets:

Raw vegan brownie : (8 servings)
INGREDIENTS:
225g of walnuts
60 grams of almonds
400g of medjool dates
25gr of pure cocoa powder
2 tbsp maple syrup
a pinch of salt
STEP BY STEP:
Put the nuts in the processor and beat for a few seconds until they are chopped.
Add the rest of the ingredients and beat again until they are well integrated and a giant ball is formed.
Remove the dough from the processor and put it on a baking tray.
Leave the brownie in the freezer for 1 or 2 hours.
Cut the brownie into small pieces and store them in the fridge.
Beetroot Smoothie Bowl : (Serves 2)
INGREDIENTS:
6 frozen ripe bananas
2 raw beets
1/4 almond milk
40g of homemade granola
10 pecans
1 fresh cocoa bar
2 tbsp shredded coconut
2 tbsp hemp seeds
2 tbsp cinnamon
STEP BY STEP:
Bake the beets with cinnamon until completely tender.
Let them rest outside.
Once cool, put a beetroot together with 4 bananas and the almond milk in a blender and blend until a homogeneous mixture remains.
Place the smoothie in a bowl.
Sprinkle grated coconut.
Cut the energy bar into slices and add it to the bowl.
Add half a beetroot, 1 sliced banana, homemade granola, 5 pecans, and the hemp seeds to each serving.
